Eating delicious and healthy food feels great and will keep you healthy year round, while saving your waistline. These chicken kebabs are absolutely delightful and so good on a barbecue!
It’s no secret in the world of gourmet cuisine that the taste of your food closely correlates with the freshness and quality of the ingredients you use. Using good ingredients will also pack a lot more nutrients in your food and will compound the benefits you derive from it. In the case of the following recipe of chicken kebabs, I used organic, free range chicken with fresh veggies from my local market. The result? A tender meat that melts in your mouth with the veggies so fresh and delicious that I am already hungry for another portion!
Healthy Chicken Kebabs
If you are already following our diet plans, this is the breakdown of this recipe – 1P + 1FC (each). Recipe makes 4 serving.
Ingredients
- 1/4 cup fat-free plain yogurt (organic)
- 2 1/2 tbsp. Frank’s RedHot Original Cayenne Pepper Sauce
- 1 lb. raw boneless skinless chicken breast, cut into 1-inch cubes (organic, free ranged)
- 2 small zucchini, cut into chunks (fresh, organic)
- 1 medium onion (fresh, organic)
Directions
- In a medium sealable container, thoroughly mix yogurt with 1/2 tbsp. hot sauce. Add chicken and stir to coat. Cover and refrigerate for 1 hour.
- Meanwhile, if using wooden skewers, soak them in water for 20 minutes to prevent burning. (You’ll need four.) Cut carrots and onion into 1-inch chunks. I have metal skewers I use regularly.
- Alternately thread saucy chicken and veggies onto four skewers, tightly packing the pieces together.
- Bring a grill sprayed with nonstick spray to medium-high heat. Grill kebabs for 5 minutes with the grill cover down.
- Flip kebabs. With the grill cover down, grill for 6 – 8 minutes, or until chicken is cooked through. Baste with extra hot sauce throughout cooking.
