Coconut Oil Fudge Recipe
Ingredients
- 1 scoop protein powder
- 1-2tbsp unsweetened cocoa powder
- 1/2tbsp coconut oil
- 1/2tbsp nut butter of choice
- Stevia to taste
- Optional = vanilla, mint, almond – whatever flavour you desire start small & increase)
Directions
- Melt coconut oil & nut butter in the microwave for 15-20 seconds
- Combine protein powder & cocoa powder
- Add coconut oil mixture, stevia and flavour to the protein powder and mix until thoroughly combined – mixture will be quite thick depending on protein powder used
- If fudge becomes too stiff to mix, pop into the microwave for 10 seconds at a time to soften
- Scoop fudge into a flat tupperware or pan of choice lined with parchment or wax paper
- Freeze for 1-3hrs, removing for 5-10 minutes before eating
Modifications
- Like a firmer fudge? Use all coconut oil and omit the nut butter
- You can use plant based protein powder in the recipe above – add a splash of almond milk if a thicker consistency is reached with this substitution
- Play around with different combinations of extract like chocolate mint, chocolate orange, chocolate almond…
- Prefer vanilla fudge or cinnamon? Omit the cocoa powder & use vanilla protein powder, adding cinnamon or pumpkin pie spice at the end
