I always loved breaded chicken and was extremely sad to find out that I couldn’t have it anymore, after I was diagnosed with gluten intolerance. I had to give up one of my favorite dishes I loved since childhood. I wasn’t sad for too long until I found out a workaround that is probably better than the original – this flaxseed breaded chicken recipe is completely gluten free and just as tasty!
In general, eating healthy doesn’t require eating bland food. All you need is to swap the unhealthy ingredient for the healthy ones! In this recipe, we will replace the unhealthy bread crumbs for the flaxseed and herbs. Both of these replacements will pack omega 3s and add flavour to your chicken making it an irresistible and delicious kitchen classic that will melt in your mouth!
Flaxseed Breaded Chicken Recipe
Ingredients
- 1/4 cup ground golden flaxseed
- 2 tablespoons dried onion flakes
- 1/2 teaspoon each dried dill, dried oregano, garlic powder, and salt
- 1/8teaspoon black pepper
- 2 tablespoons egg whites
- 1 pound boneless, skinless chicken breasts – optionally slices into strips
Directions
- Preheat oven to 400 degrees. Line a baking sheet with foil and place wire rack on top of it. Spray rack lightly with cooking spray to prevent your chicken from sticking and falling apart.
- In a shallow, wide bowl combine flaxseed, onion flakes, dill, oregano, garlic, salt, and pepper. Place egg white in a separate bowl.
- Dip one chicken breast or strip into egg, allow excess to drip off, and press each side into flaxseed mixture to coat. Place on wire rack on prepared baking sheet. Repeat with each chicken breast.
- Bake for 25 minutes or until browned and cooked through.
Variations
– Vegetarian? Swap chicken for tempeh
– Low FODMAP or sensitive stomach? Omit onion flakes and garlic, increasing other flavourings
