Some of us can’t have things like oatmeal in the mornings, since too much fiber may be too much to handle for the first meal. A shake may not be enough and you would hear your stomach growling in 30 minutes too.
Eggs on the other hand, have always been my top pick in the morning. They are perfectly satiating and at the same quite gentle on the digestive system that is still waking. They are quite versatile and you can do so many cool things with them and today I am going to show you may breakfast favorite that will kickstart your metabolism in the morning, without overloading the system!
Healthy Breakfast for Champions – Baked Green Eggs

(Serves 4)
What you need:
- 1 egg
- 1 x 16oz egg white carton (2 cups)
- 1 cup low fat cottage cheese
- 1 cup al dente steamed broccoli, chopped into bite sized pieces
- Onion powder, garlic powder, salt & pepper to taste
- 1 medium avocado
- Optional: 2 fresh roma tomatoes chopped + fresh cilantro
What you do:
- Preheat oven to 375F
- Spray 1 large pie plate or 4 mini-pie plates with non-stick cooking spray
- In a food processor or blender, combine whole egg with cottage cheese until a smooth consistency is reached. Add in seasoning.
- In a separate bowl, whisk egg whites until frothy/soft peaks are formed. Carefully fold cottage cheese mixture and broccoli pieces into egg whites.
- Spoon mixture into prepared dishes. Bake in oven for 20-25 minutes for mini pans & 30-35 for big pie plate.
- Remove from oven and let cool before serving
- Top each serving with 1/4 avocado diced + tomatoes & cilantro
