Healthy Carrot Cake Cookie Recipe – YUM!
What you need:
- 1/2 cup, Egg Whites
- 1 1/2 Tsp, Cinnamon
- 1/4 tsp, pumpkin pie spice
- 1 1/4 tsp, Vanilla extract
- 1/2 cup Carrots, grated
- 10-12 drops liquid stevia to taste
- 2 Scoops, Whey Protein – Vanilla
- 1 3/4 cup, Oats
- 1/2 tsp baking powder
- 3/4 Cup Zucchini, grated
Yield: 6 servings
What you do:
- preheat oven to 350 degrees
- mix whey protein, oats, spices and baking powder in a medium bowl
- add zucchini and carrots to the oat mixture and stir until combined
- add egg whites, vanilla and stevia to the dry ingredients
- line a baking sheet with parchment paper. Drop batter onto prepared pan into 12 dollops.
- bake for 15 minutes or until browned on top
- 2 cookies is 1 serving
