Healthy Carrot Cake Cookie Recipe That Will Crush Your Food Cravings

Food cravings can hit out of the blue and you have to be prepared for anything! These healthy carrot cake cookies are a quick and easy option to make a breakfast on the go and all week long. Healthy Carrot Cake Cookie Recipe – YUM!

What you need:

  • 1/2 cup, Egg Whites
  • 1 1/2 Tsp, Cinnamon
  • 1/4 tsp, pumpkin pie spice
  • 1 1/4 tsp, Vanilla extract
  • 1/2 cup Carrots, grated
  • 10-12 drops liquid stevia to taste
  • 2 Scoops, Whey Protein – Vanilla
  • 1 3/4 cup, Oats
  • 1/2 tsp baking powder
  • 3/4 Cup Zucchini, grated

Yield: 6 servings

What you do:

  1. preheat oven to 350 degrees
  2. mix whey protein, oats, spices and baking powder in a medium bowl
  3. add zucchini and carrots to the oat mixture and stir until combined
  4. add egg whites, vanilla and stevia to the dry ingredients
  5. line a baking sheet with parchment paper. Drop batter onto prepared pan into 12 dollops.
  6. bake for 15 minutes or until browned on top
  7. 2 cookies is 1 serving
