Healthy Meatloaf Bits with Potato Topping

I think everyone can agree that meatloaf is a truly timeless classic that never gets out of fashion. It is good to enjoy on its own or with a side of your favourite starch and veggies. However, the traditional way of making it is perhaps not the friendliest to our midsections. If you are already using the Body Beautiful app, then you know that a small piece of the traditional meatloaf amounts to about 500 calories! So in my opinion, it is time to revamp the traditional recipe and make it (I almost said ‘great again’) a bit healthier and portable. Introducing the healthy meatloaf bits! Here are 3 main reasons to why you would want to make them:

  1. These are the meatloaf bits, meaning we will be making them into small portions. Of course you can make a regular shape meatloaf and then cut it, but by making it into bits right off the bat, we will eliminate the extra step of cutting (and washing the knife afterwards).
  2. This recipe calls for turkey and doesn’t contain ketchup, thus making the dish much healthier. Plus we will add some oats and Greek yogurt – superfoods that will keep you satisfied, at no additional inches added to your waistline.
  3. It already contains garnish! Meatloaf and mashed potatoes are like shoes and shoelaces – they just cannot be separated. The problem however, is that it is so darn easy to eat too much of the potatoes, which results in increased amounts of calories that don’t get burned for energy and as a result, stored as fat. Now, by topping your meatloaf bits with some potatoes, we automatically create portion control that allows you to enjoy the traditional taste, but keep the calories in check!

So if you are ready to make this yummy dish then here is what you need to do:

Healthy Meatloaf Bits Recipe

Yields = 6 servings, 1P+1SC per serving

What you need (Meatloaf):

1 cups, Onions minced
0.50 cup, Quick Cooking Oats
0.25 cup, Crushed tomatoes
2 tsp(s), Garlic powder
1 g(s), Salt and Pepper Seasoning
1/2 cup, Egg Whites
1.25 lb(s), Extra Lean Ground Turkey

What you need (Topping):
3 small Potatoes, peeled and cubed
0.75 cup, Plain Greek yogurt
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. salt
1tbsp chives dried

What you do:

  1. In a large bowl, combine all meatloaf ingredients. Thoroughly mix.
  2. Evenly distribute meatloaf mixture among the muffin cups, and smooth out the tops. Bake until firm and cooked through with lightly browned edges, 20 – 25 minutes.
  3. Meanwhile, bring a medium pot of water to a boil. Add potatoes. Once returned to a boil, reduce heat to medium. Cook until very tender, 15 – 20 minutes.
  4. Drain and transfer potatoes to a large bowl. Add remaining ingredients. Thoroughly mash and mix. Evenly top mini meatloaves with mash. You can pop back in the oven for 3-5 extra minutes to firm up mash topping.
