Baked sweet potato is a fantastic way to add the super healthy complex carbs, fiber, vitamins and minerals to your diet. Baking or boiling them may be easy, but it proves itself redundant, after a while. Now, a sweet potato toast is a whole new thing! You can definitely eat them as is, but you can also put your favorite toppings, like low calorie cream cheese, or goat cheese. You can even make cheese melts, just imagine the possibilities!
So to make these super delicious and easy toasts, all you need is to cut up the potatoes into thin slices and…. toast them in your toaster, that’s it! But today, I would love to share with you tow of my favorite ways of making the sweet potato toast. Ready? Here we go!
The toast yields to servings and all you need for it is two sweet potatoes.
Directions for toast
To turn a sweet potato into a bread-like shape, you have to slice it. (No need to peel though.) Getting nice, even lengthwise slices of sweet potato can be a little tricky, so take a slice off one side of your potato and rest it, flat side–down, on the cutting board while you cut the rest of it into 1/4-inch slices. Try to keep your slices as even as possible—too thin and they won’t hold their shape; too fat and they’ll take too long to cook.
To “toast” the slices, you can pop them into the slots of a standard toaster or set them up in a toaster oven. Either way, crank it up to the highest setting and keep toasting until the surface of each slice is beginning to brown and the inside is tender when pierced with a fork.
You can also use the oven. Crank your oven up to 450°F and then either place your sweet potato slices directly on the grates or on a sheet pan and flip every 5 minutes or so until they’re nicely browned on the outside and soft inside, about 15 to 20 minutes total.

Sweet Potato Toast with Tuna Salad
Here is what you need for this topping:
1/3 cup Fat Free Greek Yogurt
2-3 drops Liquid Stevia
1 Tbsp, Dill Pickle Relish or minced dill pickles
1 dash, Salt
1 can tuna
1/2 cup diced Bell Peppers
1/4 cup Carrots Chopped
1/4 cup chopped, Celery, raw
1 TB, Dijon Mustard
Directions: Combine all ingredients in a bowl. Let sit for 30-60 minutes to let flavours combine. Top sweet potato toast with tuna salad
Sweet Potato Toast with Chicken Salad
1/4 cup Celery, raw minced
2 tbsp, Basil, fresh
1 tsp., Kosher Salt
1 tsp, Black Pepper – Ground
8 oz, Cooked chicken breast, shredded with a fork
1 tsp(s), garlic powder
2tbsp Scallion/Green Onion
1/3 cup Greek Non-fat Yogurt Plain
2 tbsp Dill weed, fresh
2 tbsp chopped, Chives
Directions: In a large bowl stir together yogurt, mustard, celery, scallion, herbs, garlic powder, salt and pepper. Add chicken and stir to combine.
